The grapes come from a selection of the best vineyards, grown in the lands of the municipality of Capriolo, in the heart of Franciacorta. After the manual harvest, the grapes are sent for fermentation in steel tanks and a small part in oak barrels. In spring we proceed with the tirage and subsequent refermentation in the bottle, with one minimum stay on the lees for 60 months. After disgorgement, the bottles are filled without adding sugar and closed with the classic mushroom cap and cage. After a few months of storage in the cellar, they are ready to be put on the market.
